Applesauce Cake

with Cream Cheese Frosting

    INGREDIENTS:
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 1/2 cup shortning (or butter)
  • 1 cup sugar
  • 1 egg
  • 1 cup unsweetened tart, stiff applesauce
  • 1 cup seedless raisins
  • 1 cup chopped walnuts (optional)
    PREPARATION:
  • Sift flour, add soaa, spices and salt, and resift
  • Cream shortning well and gradually blend in sugar. Beat in egg, then applesauce.
  • Add flour mixture gradually, beating after each addition until well blended. Stir in the raisins and walnuts.
  • Turn into a buttered 8-inch square cake pan, lined with waxed paper in the bottom; bake in moderate oven (350F) 45 minutes, or until toothpick inserted in the center comes out clean.
  • Or bake in greased muffin cups 25-30 minutes.
  • Cool before serving. Applesauce cake improves with age, if kept in a breadbox.
