German Potato Salad

    INGREDIENTS:
  • 5 lbs. potatoes
  • 1 lb. bacon
  • medium onion, grated
  • 1/4 cup white vinegar
  • 1 tbls sugar, heaping
  • 3/4 cup water
    DIRECTIONS:
  • Boil potatoes, cool, peel and slice.
  • Cut up bacon and fry to crisp,
  • grate 1 medium onion over potatoes,
  • pour hot bacon grease over onions to parcook.
  • Add salt, pepper and dill weed to potatoes.
  • Mix 1 white vinegar, sugar and hot water to make 1 cup, stir until sugar is disolved, then pour over potatoes and mix well.
  • Add crisp bacon and mix in.
  • If potatoes soak up too much of the vinegar mixture, make another cup and pour over a little at a time.
