Red Waldorf Cake (from Irish )
INGREDIENTS:
- 2 Eggs
- ½ cup unsweetened cocoa powder
- 2 oz red food coloring (1/4 cup)
- 2 ¼ cups sifted cake FLOUR OR 2 CUPS Sifted all purpose flour
- ½ cup shortening
- 1 ½ cups of sugar
- 1 teaspoon of vanilla
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon vinegar
- Creamy frosting
DIRECTIONS:
- 1. allow eggs to stand at room temp for 30 minutes.
- While greasing two 9X11/2 round pans, stir together the cocoa powder and red food coloring
- in another bowl stir flour and salt together
- 2. in a large mixing bowl beat shortening with an electric mixer on med or high speed for 30 seconds add sugar and vanilla beat until well combined
- add eggs one at a time beating at medium or high speed add cocoa mixture while beating in and than the flour mixture and than the buttermilk beat at low speed until combined
- stir vinegar and baking soda together and add to batter mixing until combined.
- Pour batter into prepared pans
- 3. Bake in 350 deg F oven for 30 to 35 minutes,
- Or until wooden tooth pick comes out clean..
- 4. when done let cake cool in pans for 10 minutes
- remove cake from pan and let cool completely on wire rack
- frost with a creamy frosting cover and store in fridge for up to 3 days.
